Australia
This one would be more about seeing things, doing things — all the fun stuff.
Introducing
Paul Worsteling
Paul Worsteling has spent three decades making Australia's fishing culture accessible, exciting and genuinely entertaining for people who fish seriously and people who've never held a rod. As the face of I Fish — one of Australian television's longest-running outdoor programs — he's taken cameras into remote billabongs, offshore fishing grounds and every corner of the Top End. What he delivers isn't a highlight reel. It's the real thing: hard-won knowledge of where the fish run, which pubs are worth the detour, and which local chefs are doing something genuinely special with the produce. For a group of business owners who admire what Paul does, having him on the water beside them — pulling pots, calling the fishing, pointing out the crocodile before anyone else does — is the access they can't buy anywhere else.
When Paul isn't filming or guiding, he's planning what he'll cook. He talks about a porchetta the way other people talk about a great deal — with genuine excitement and detailed reasoning. His son travels with him when the trip is right. Darwin in March or April is the kind of trip that's right.
